Valentine’s day is such a fun holiday! We love to celebrate love, anyone else?  Whether you’re celebrating with your significant other, your bff, or your loved ones, this holiday tends to be full of delicious dinners and decadent desserts.  Now, we’re not telling you to skip on the chocolates, but start off with one of these yummy (and healthy) dinners for two, and then move on to the good stuff!

  1. Vegetarian Sweet Potato and Black Bean Chili: Perfect for a chilly date night, and bonus – this recipe makes enough for you and your Valentine to have for lunch the next day too!
  2. Easy Italian Chicken and Veggie Bake: Foil packs make this recipe super easy. Just pop in the oven, and then enjoy your date while it cooks!
  3. Honey Mustard Salmon with Mango Quinoa: Looking for a fun twist on a typical salmon dinner? This recipe is a different take on a traditional date night meal.
  4. Kung Pao Chicken Zoodles: Forget going out for Chinese food this Valentine’s Day. Stay in and make this healthier take on Kung Pao Chicken and Zoodles.  
  5. Parmesan Pesto Spaghetti Squash With Shrimp: I’m all about a healthy twist on a traditional pasta dish. Pesto and spaghetti squash are a match made in heaven.
  6. Tuna Spring Rolls with Pineapple Dipping Sauce: Looking for a fun activity to do with your Valentine? Try your hand at homemade spring rolls. They are delicious and super fun to make together.  
  7. Grilled Balsamic Chicken Salad with Spiced Pecans: This recipe is super simple and light. The spiced pecans and balsamic vinegar give it a sweet taste, perfect for a healthy Valentine’s date night.

These turkey meatballs are easy to make ahead of time, and the zoodles only take a few minutes to whip up.  This recipe is perfect if you’re on the go this Valentine’s Day but need a healthy and quick option for dinner!
